On many patch examples (Patch 1 Rockabilly etc), the diagram shows:
audio signal > delay input. Delay input > CH 1 VCA mixer.
My question is: how is this achieved? Only one patch point (delay input) but two source/destinations? How can delay input be connected to two sources simultaneously?

In most modular setups, you can split the signal using a passive mult or a stackable cable. That way one output can feed both the delay input and another destination like the VCA.
